Lactococcus lactis ssp. lactis
Lactococcus lactis is a friendly strain of bacteria, commonly found in everyday life. This is due to the fact that L. lactis has the ability to produce lactic acid. The principal role of L. lactis in dairy fermentations involves the metabolism of lactose to lactic acid and the conversion of milk proteins into flavor compounds.
